Vegan Lemon Blueberry Loaf

All my vegan/dairy-free friends have one thing in common. They miss desserts. For some weird reason, even with the plethora of great vegan dessert recipes available they are usually lacking in restaurants and family gatherings.

Here is the thing, though, unfortunately sometimes vegan bread can either a) taste awfully sour or b) be a pain in the butt to make. This recipe though is one of my absolute all time favorites and it is ready in about an hour and half (much of which is spent in the oven.)

This one also looks absolutely beautiful (but that is mostly due to my William’s Sonoma bundt cake pan)

Things that will make this recipe a million times better:

  • Make it the day you’re going to eat it.
  • Use fresh berries
  • Coat said berries in a bit of flour before folding them (manually!) into your batter so they will stay all over the loaf and not sink all to the bottom.
  • Mix the lemon zest in with your sugar so the sugar
