Stress baking is a thing. During finals and midterms I usually stress bake a lot – which makes my friends and family really happy. This semester, though, my finals were so hectic that I didn’t even have time for that. So now, I’m apparently making up for that by baking up a storm during the summer break.
Most recent discovery: vegan vanilla cupcakes. These are simple, delicious, and 100% vegan. Best part? You can make them as simple vanilla muffins or you can mix in different fruits and nuts to change up the recipe. Even better? This recipe only makes about 6 regular-sized cupcakes so you won’t have cupcakes for days and days.
